A healthy and filling high-protein breakfast.
In a food processor or high speed blender, blitz oats into a fine flour
Crack eggs into a medium-sized bowl and whisk briefly to incorporate some air. Add oats, cinnamon, baking powder and almond milk, whisk until combined.
Pour as much mixture as desired onto a pan over medium heat. Cook for 2-3 minutes or until small bubbles have formed on the surface, flip and cook for another minute (longer if the pancake size is larger).
Continue until all of the mixture has been used. Serve topped with Greek yogurt and berries and drizzle with maple syrup.
