During the weekdays I can easily lose track of time and by the time I realise I haven’t planned anything for dinner I’m already hungry. It’s easy to make bad food decisions when you’re hungry, that’s why planning meals or doing meal prep is great because your decision is already made for you. But of course sometimes our schedules can get in the way or we become a little less organised and that’s when it’s handy to have some easy meal ideas up your sleeve that you can whip up in no time at all, like these quick and easy Buttery Greens.

 

One of the quickest ways to cook vegetables is by steaming them. There’s barely any prep other than chopping your veggies down to a size that can fit in your steamer basket, then just boil the water and leave it to cook! Steaming is also a great method of cooking to help retain a lot of the nutrients of the veggies.

These simple greens are a great side dish and will go with virtually anything. I like to fry up some salmon or other type of protein while these cook for really quick, easy dinners. This recipe is also such an easy side dish to prepare if you’re having people over and don’t want to stress over a large and complex meal.

 

I started adding more butter and salt to my vegetables when I started following a ketogenic diet. Part of that diet was to increase the amount of fat I was eating each meal so a little bit of butter was an easy (and very tasty) solution. I also found that as my body adapted to the dietary changes I was getting some minor muscle cramps, which I could combat by adding a little extra salt to my meals. All this led to the recipe shown here. Even when I went back to a standard diet I still made this recipe because I absolutely love the way it tastes!

 

The pine nuts on top are an extra addition, I don’t always put them on but at the time of making this I just had some on hand and thought I would throw them on top. You don’t have to add them, however a few seeds or chopped nuts sprinkled over the top of meals is a great way to add some extra nutrients.

Quick and Easy Buttery Greens

Ingredients

  • 1 bunch broccolini
  • 1 bunch asparagus
  • 120 g brussels sprouts quartered
  • 30 g unsalted butter melted
  • 1/4 tsp sea salt
  • pine nuts to top optional

Instructions

  1. Layer vegetables in a steamer basket (careful not to overcrowd) and place over a saucepan of boiling water

  2. Steam vegetables for 10 minutes or until tender

  3. Take vegetables off the heat and transfer into a bowl

  4. Pour the melted butter and sea salt over the vegetables and toss to coat

  5. Serve topped with a handful of pine nuts (optional) and an additional sprinkle of sea salt
