Mango Pomegranate Salad

This Mango and Pomegranate Salad is the perfect Summer salad. It’s light and slightly sweet yet has an earthiness to it from the creamy tahini dressing. Not only is it delicious but it’s also full of nutritious ingredients.
If I’m being honest, I never used to like eating salads. I ate them because they’re healthy, but I never really enjoyed munching on the same boring vegetables I threw together each time. That is until I started this blog and started creating salads that I thought I might actually enjoy. It really opened my eyes to different combinations of flavours and textures, and now I’m actually excited to have a salad!
This salad was a bit of an experiment. I put it together with what I had available in the house and thought oh no, this might be awful. I served it up at dinner and much to my delight it wasn’t terrible! All the flavours worked and we actually really enjoyed it! I was shocked, but also relieved because I knew my boring basic salad days were over. No more trying to fight through something I knew I didn’t enjoy.
It might seem obvious to some people, preparing salads with different interesting ingredients that you already know you like, but others may struggle with making healthier meals enjoyable and that’s where I want to offer suggestions that have helped me. Maybe you don’t know that much about cooking/how to prepare certain foods, maybe you’re nervous about trying something new, maybe you’re just stuck in a rut of eating the same thing every day because it’s easy. Whatever the reason, my goal is to help inspire you to create healthy meals you’ll actually be excited to eat.
Personally I have a bit of a sweet-tooth, which is why I love this recipe so much. The mango and pomegranate both add a touch of sweetness to an otherwise savoury salad. Not only is adding fruit to your salads delicious but it’s also a great way of incorporating an extra serve of fruit into your day.
I’ve used sugar snap peas in this recipe mainly because they have add a great crunch element and I like the flavour of them, but you can use regular peas or snow peas if you prefer. If you’re using snow peas just add them whole or roughly chop rather than trying the shell them. You can keep the sugar snap peas whole too if you don’t have time to shell them, I just like the way they look sprinkled throughout the salad.
Everyone has different tastes so even if this particular recipe isn’t for you I hope it inspires you to experiment with other ingredients you love and create something of your own that gets you excited. Finding foods and flavours you love is a key part of being able to maintain a healthy and nourishing lifestyle.

Mango Pomegranate Salad
Ingredients
- 120 g rocket
- 1/2 red onion finely sliced
- 1/3 cup pomegranate seeds
- 300 g sugar snap peas shelled
- 1 mango peeled and sliced
- 1.5 tsp sesame seeds
Dressing
- 2 tbsp olive oil
- 2 tsp lime juice
- 1 tbsp fresh mint roughly chopped
- 1 cm piece of ginger finely grated
- 1 tsp tahini
Instructions

Dressing: Put all ingredients together in a small glass jar, screw lid shut and shake until combined.

Place rocket in a large serving bowl, pour over 1/4 of the salad dressing and toss to coat leaves.

Add red onion, mango and half the peas and pomegranate seeds, add remaining dressing and toss to combine. Top with remaining peas and pomegranate seeds, and sprinkle over sesame seeds.
Recipe Notes
Aim to get more plump feeling sugar snap peas, as they will have larger, more matured peas in them
