Healthy Maple Cinnamon Porridge

With winter well and truly setting in warmer meals are definitely called for and what better way to start the day than with a warm bowl of delicious porridge.
Not only is porridge an easy winter breakfast idea, it’s also a highly nutritious meal. Oats are full of fibre which is great for aiding digestion and keeping you feeling full throughout the morning. Adding a pinch of cinnamon is also a great way to kickstart your metabolism and provide your body with natural antioxidants.
This recipe has the added bonus of being completely dairy-free, I’ve used almond milk but I’m sure other types of nut milk would work just as well. You can of course use regular cow’s milk for a lovely creamy texture if you’re not avoiding dairy.
It’s getting so cold here this year, usually I have no problem getting through the winter but honestly I’m starting to think this time I need to escape to a warmer climate until it’s over! At least at this time of year we can enjoy an abundance of hot home cooked food like rich slow-cooked meals and velvety soups. It’s the perfect time to do big cook-ups actually, when I made this porridge the other day I was so thankful I could just wake up each morning and reheat it and not have to worry about preparing anything.

Healthy Maple Cinnamon Porridge
A delicious healthy breakfast recipe for those cold winter mornings.
Ingredients
- 1 cup rolled oats
- 3 cups water
- 1/4 tsp sea salt
- 1/4 cup almond milk
- 1/2 tsp cinnamon
- 1 tbsp pure maple syrup
Instructions

Combine oats and water in a saucepan over medium heat, add sea salt.

Bring to the boil, stirring constantly. Reduce heat and simmer, stirring occasionally, for 15mins or until the mixture has reached a creamy consistency.

Remove from heat and stir in almond milk. Add cinnamon and maple syrup and stir until combined. Serve as is or top with your favourite fruit.
